Wash and chop 500 grams of mixed vegetables such as carrots, potatoes, and bell peppers into bite-sized pieces.
In a large bowl, combine the chopped vegetables with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 tablespoon of dried thyme.
Toss the vegetables until they are evenly coated with the oil and spices.
Spread the vegetables in a single layer on a baking tray.
Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized.
Stir the vegetables halfway through the cooking time to ensure even roasting.
Remove from the oven and serve hot.
