Grind 200 grams of cashew nuts into a fine powder using a mixer grinder.
In a heavy-bottomed pan, add 100 grams of sugar and 50 ml of water. Heat on medium flame until the sugar dissolves completely.
Add the cashew powder to the sugar syrup and mix well to form a smooth paste.
Cook the mixture on low flame, stirring continuously until it thickens and starts to leave the sides of the pan.
Remove the mixture from the heat and let it cool slightly.
Grease your hands with a little ghee and knead the mixture to make it smooth.
Take small portions of the mixture and shape them into modaks using a modak mould or by hand.
Allow the modaks to cool completely before serving.
