Heat a pan on medium flame and dry roast 1 cup of grated coconut until it turns light golden brown. Set aside.
In the same pan, add 1 cup of chopped dates and cook until they soften, stirring continuously.
Add the roasted coconut to the softened dates and mix well.
Add 1/2 teaspoon of cardamom powder and mix thoroughly.
Turn off the heat and let the mixture cool slightly.
Grease your hands with a little ghee and shape the mixture into small modaks using a modak mould or by hand.
Allow the modaks to cool completely before serving.
