Boondi Modaks
Boondi Modaks are delightful, sweet dumplings made from tiny, fried gram flour pearls, perfect for festive occasions! Ingredients: Besan, Oil, Sugar, Water, Cardamom powder, Ghee

In a bowl, mix 1 cup of besan (gram flour) with enough water to make a smooth batter.

Heat oil in a kadhai on medium flame for deep frying.

Using a perforated spoon, pour the batter through the spoon to form small droplets (boondi) into the hot oil.

Fry the boondi until they turn golden and crisp. Remove and drain on paper towels.

In another pan, heat 1 cup of sugar with 1/2 cup of water to make a sugar syrup. Cook until it reaches a one-string consistency.

Add the fried boondi to the sugar syrup and mix well until all the boondi is coated with the syrup.

Add 1/4 teaspoon of cardamom powder and mix well.

Grease a modak mould with ghee and fill it with the boondi mixture. Press firmly and then gently remove the modak from the mould.

Repeat the process until all the boondi mixture is used up.

Allow the modaks to cool and set before serving.
