Preheat your oven to 180°C.
Wash and slice the tops off 4 medium-sized capsicums. Remove the seeds and membranes carefully to form a hollow.
In a bowl, mix 200 grams of grated paneer, 100 grams of grated mozzarella cheese, 1 finely chopped onion, 1 finely chopped tomato (seeds removed), 2 tablespoons of sweet corn, 1/2 teaspoon of red chilli powder, 1/2 teaspoon of garam masala, and salt to taste.
Stuff this mixture into the hollowed capsicums until they are fully filled.
Place the stuffed capsicums in a baking dish and cover loosely with aluminium foil.
Bake in the preheated oven for about 20 minutes.
Remove the foil and bake for an additional 10 minutes or until the cheese on top turns golden brown.
Garnish with fresh coriander leaves and serve hot.
