Preheat your oven to 180°C.
Slice a baguette into 1 cm thick slices and arrange them on a baking tray.
Brush each slice lightly with olive oil.
Bake in the preheated oven for 5-7 minutes, or until the bread is slightly crispy.
While the bread is toasting, chop 2 tomatoes and 1 small onion finely.
In a bowl, mix the chopped tomatoes and onion with 1 tablespoon of olive oil, a pinch of salt, and some freshly ground black pepper.
Grate 100 grams of mozzarella cheese.
Once the bread is toasted, remove from the oven and spoon the tomato-onion mixture onto each slice.
Top each slice with grated mozzarella cheese.
Return the tray to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
