Boil 500 grams of potatoes until they are soft, then peel and mash them.
Finely chop 1 medium-sized onion and 2 green chillies.
In a large bowl, mix the mashed potatoes, chopped onions, green chillies, 1 teaspoon of grated ginger, 1/2 teaspoon of red chilli powder, 1 teaspoon of chaat masala, 1/2 teaspoon of garam masala, and salt to taste.
Add 2 tablespoons of finely chopped coriander leaves and mix well.
Divide the mixture into equal portions and shape each portion into a flat round tikki.
Heat oil in a pan over medium flame. Once the oil is hot, gently place the tikkis in the pan.
Fry the tikkis until they are golden brown and crispy on both sides, flipping them carefully midway through frying.
Drain the fried tikkis on paper towels to remove excess oil.
Serve the Fried Aloo Tikki hot with mint chutney or tamarind chutney.
