Measure 250 grams of ghee and heat it in a heavy-bottomed kadai on a low flame until it melts completely.

Slowly add 250 grams of whole wheat flour (gehun ka atta) to the melted ghee, stirring continuously to avoid lumps.

Roast the mixture on a low flame for about 8-10 minutes or until it turns golden brown and emits a nutty fragrance. Ensure the flame is low to prevent burning.

Turn off the flame and let the mixture cool for a minute. Then, add 200 grams of grated jaggery (gur) to the kadai and mix well until the jaggery melts and combines with the flour and ghee mixture.

Quickly transfer the mixture to a greased thali or plate before it hardens. Flatten the surface with a spatula or a cup to even it out.

While the mixture is still warm, cut it into desired shapes (usually square or diamond).

Allow the Sukhdi to cool completely before removing the pieces from the thali.

Store the Sukhdi in an airtight container and enjoy as a dessert or snack.
