Clean 100 grams of mushrooms by wiping them with a damp cloth and then slice them thinly.

Heat 1 tablespoon of oil in a non-stick pan over medium heat.

Add the sliced mushrooms to the pan and sauté until they are golden brown and all the water has evaporated, about 5-7 minutes.

In a bowl, beat 2 large eggs with a pinch of salt and a pinch of black pepper until well combined.

Pour the beaten eggs over the sautéed mushrooms in the pan, ensuring the eggs spread evenly.

Cook the omelette on medium heat until the edges start to lift from the pan. Use a spatula to gently lift the omelette and check if the bottom is golden.

Fold the omelette in half and slide it onto a plate.

Garnish with a few fresh coriander leaves and serve hot.
