Masala Dosa

Soak 1 cup of urad dal and 2 cups of rice separately in water for 6-8 hours.

Rinse both the dal and rice, then grind them separately into a smooth paste, adding water as needed.

Mix the dal and rice paste together in a large bowl, add 1 teaspoon of salt, and let it ferment overnight.

For the masala, boil 500 grams of potatoes until soft, peel and mash them.

Heat 2 tablespoons of oil in a pan, add 1 teaspoon of mustard seeds, and let them splutter.

Add 2 finely chopped onions, 1 teaspoon of turmeric powder, and salt to taste. Sauté until the onions turn translucent.

Add the mashed potatoes and 2 chopped green chillies to the pan, mix well, and cook for 2-3 minutes. Set aside.

Heat a non-stick tawa over medium flame. Once hot, pour a ladleful of the dosa batter and spread it in a circular motion to make a thin crepe.

Drizzle 1 teaspoon of oil around the edges of the dosa and cook until the bottom starts to brown.

Place a portion of the potato filling in the center of the dosa, fold it, and remove from the tawa.

Serve hot with coconut chutney and sambar.
