Aloo Poha
Aloo Poha is a quick, delicious, and nutritious breakfast dish, perfect for a busy morning or a lazy weekend brunch. Ingredients: Poha, Potato, Oil, Mustard seeds, Onion, Green chilli, Curry leaves, Turmeric powder, Salt, Coriander, Lemon

Rinse 2 cups of poha (flattened rice) in water until it becomes soft. Drain the water and set aside.

Heat 2 tablespoons of oil in a pan. Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 finely chopped onion, 2 slit green chillies, and 8-10 curry leaves. Sauté until the onions turn translucent.

Add 1/2 teaspoon of turmeric powder and salt as per taste. Mix well.

Add 2 medium-sized potatoes, diced and boiled, to the pan. Mix and cook for 2-3 minutes.

Add the softened poha to the pan. Gently mix everything together, ensuring the poha is coated with the spices.

Cover and cook on low heat for 2-3 minutes.

Garnish with chopped coriander leaves and a squeeze of lemon juice before serving.
