Coconut Rice
Coconut rice is a simple, flavorful dish that goes great with curries, stir-fries, chicken, or beef. In fact, you can pair this delightful South Indian dish with just about any type of main course. Ingredients: Basmati rice, Coconut milk, Urad dal, Cashews, Salt, Curry leaves, Green chilli, Cooking oil, Mustard seeds

Rinse 250 grams of basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of mustard seeds and let them crackle.

Add 1 chopped green chilli, 10-12 curry leaves, and 1 tablespoon of urad dal. Sauté until the dal turns golden.

Add 50 grams of chopped cashews and sauté until golden.

Add the drained rice to the pan and sauté for a couple of minutes.

Add 500 ml of coconut milk and salt to taste. Stir well.

Cover the pan and cook on low heat until the rice is cooked and all the coconut milk is absorbed. This should take about 15-20 minutes.

Fluff the rice gently with a fork and serve hot.
