Rabri
Rabri is a rich, creamy, and delicious Indian dessert made by reducing milk and sweetening it with sugar. It is flavored with cardamom and garnished with nuts, making it a perfect treat for special occasions. Ingredients: Milk, Sugar, Almonds, Pista, Green cardamom

Pour 1 liter of full-fat milk into a heavy-bottomed pan and bring it to a boil over medium heat.

Once the milk starts boiling, reduce the heat to low and let it simmer. Keep stirring occasionally to prevent it from sticking to the bottom of the pan.

As a layer of cream forms on the surface, gently push it to the sides of the pan. Repeat this process until the milk has reduced to about one-third of its original volume.

Add 100 grams of sugar and 1/2 teaspoon of crushed cardamom to the thickened milk. Stir well to dissolve the sugar.

Allow the mixture to simmer for another 5-7 minutes, stirring occasionally.

Turn off the heat and let the rabri cool down. Scrape the collected cream from the sides of the pan and mix it back into the rabri.

Transfer the rabri to a serving bowl and garnish with chopped almonds and pistachios. Serve it chilled or at room temperature.
