Paneer Pasanda
Paneer Pasanda is a rich and creamy North Indian dish made with succulent paneer pieces stuffed with a delightful mixture of spices, nuts, and raisins, cooked in a luscious tomato-onion gravy.

Cut 250 grams of paneer into thin slices and set aside.

In a bowl, mix 50 grams of grated paneer, 25 grams of chopped cashews, 25 grams of chopped raisins, 1/2 teaspoon of garam masala, and salt to taste. This will be the stuffing for the paneer slices.

Place a spoonful of the stuffing mixture between two paneer slices and press gently to form a sandwich. Repeat with the remaining paneer slices and stuffing.

Heat 2 tablespoons of oil in a pan and shallow fry the stuffed paneer sandwiches until golden brown on both sides. Remove from the pan and set aside.

In the same pan, add 1 tablespoon of oil and sauté 1 finely chopped onion until golden brown. Add 1 teaspoon of ginger-garlic paste and cook for 2 minutes.

Add 2 cups of tomato puree, 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and salt to taste. Cook for 5-7 minutes until the gravy thickens.

Add 1 cup of water and bring the gravy to a boil. Lower the heat and simmer for 5 minutes.

Gently place the fried paneer sandwiches in the gravy and cook for another 5 minutes.

Add 1/2 cup of fresh cream and 1/2 teaspoon of garam masala. Mix well and cook for 2 more minutes.

Garnish with chopped coriander leaves and serve hot with naan or paratha.
