Paneer Kolhapuri
Paneer Kolhapuri is a spicy and flavorful dish from the city of Kolhapur, Maharashtra, featuring soft paneer cubes cooked in a rich and aromatic gravy.

Cut 200 grams of paneer into small cubes and set aside.

Heat 2 tablespoons of oil in a pan and add 1 teaspoon of cumin seeds, 1 finely chopped onion, and 2-3 cloves of minced garlic. Sauté until the onions turn golden brown.

Add 1/4 cup of grated coconut and 1/4 cup of chopped cashews to the pan. Sauté for 2-3 minutes.

Add 2 chopped tomatoes, 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala. Cook until the tomatoes become soft and the oil separates from the mixture.

Allow the mixture to cool and then blend it into a smooth paste using a mixer grinder.

Heat 1 tablespoon of oil in a pan and add the blended paste. Cook for 2-3 minutes.

Add 1 cup of water and salt to taste. Bring the gravy to a boil.

Add the paneer cubes to the gravy and cook for 5-7 minutes on low heat.

Garnish with chopped coriander leaves and serve hot with roti or rice.
