Misal Pav
Misal Pav is a popular Maharashtrian street food that combines spicy sprouted lentil curry with soft, buttery pav buns. It's a delightful mix of flavors and textures that will leave you craving for more.

Soak 200 grams of mixed sprouts (moong, matki, and chana) in water for 6-8 hours or overnight. Drain the water and let them sprout for another 8-10 hours.

In a pressure cooker, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 finely chopped onion, 2-3 chopped green chilies, and 7-8 curry leaves. Sauté until the onions turn golden brown.

Add 1 teaspoon of ginger-garlic paste and cook for a minute.

Add 1 chopped tomato and cook until it turns soft and mushy.

Add 1/4 teaspoon of turmeric powder, 2 teaspoons of red chili powder, 1 teaspoon of garam masala, and 1 teaspoon of Maharashtrian goda masala. Cook for 2-3 minutes.

Add the sprouted lentils, 1/2 cup of water, and salt to taste. Pressure cook for 3-4 whistles or until the sprouts are cooked.

In a separate pan, prepare the 'kat' or spicy gravy by heating 1 tablespoon of oil. Add 1/4 teaspoon of asafoetida, 1/4 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1/2 cup of water. Cook for 5-7 minutes.

To serve, place the cooked sprouts in a bowl, pour the spicy gravy over it, and garnish with chopped onions, coriander leaves, and sev. Serve hot with buttered pav buns.
