Gajar Halwa is a delicious and popular Indian dessert made from grated carrots, milk, sugar, and ghee, garnished with nuts and raisins for a delightful treat. Ingredients: Ghee, Milk, Carrot, Raisin, Cashews, Sugar

Wash, peel, and grate 1 kg of carrots.

In a heavy-bottomed pan, heat 2 tablespoons of ghee on medium flame.

Add the grated carrots to the pan and sauté for 8-10 minutes until they soften.

Pour 1 litre of full-fat milk into the pan and cook the carrots on low-medium flame, stirring occasionally until the milk is reduced and the mixture thickens.

Add 200 grams of sugar and mix well. Cook for another 10-15 minutes, stirring occasionally, until the sugar dissolves and the halwa thickens.

In a separate pan, heat 1 tablespoon of ghee and roast 1/4 cup of chopped cashews and 1/4 cup of raisins until golden brown.

Add the roasted cashews and raisins to the halwa and mix well.

Cook for another 5 minutes, then turn off the heat and let the halwa cool slightly before serving.
