In a large bowl, mix 250 grams of dosa batter with water to achieve a smooth, pouring consistency.

Heat a non-stick tawa or dosa pan on medium flame. Once hot, pour a ladleful of batter onto the tawa and spread it evenly in a circular motion to form a thin dosa.

Crack an egg onto the center of the dosa and spread it gently with a spatula, covering the entire surface of the dosa.

Drizzle 1 teaspoon of oil around the edges of the dosa and let it cook for 2-3 minutes until the egg is cooked and the dosa turns golden brown.

Sprinkle a pinch of salt, pepper, and chopped coriander leaves over the egg.

Gently fold the dosa in half and transfer it to a serving plate.

Repeat the process for the remaining batter and eggs.
