Dhokla
Dhokla is a soft, spongy, and delicious Gujarati snack made from fermented rice and chickpea flour, garnished with tempered spices and fresh coriander leaves.
Ingredients: Besan, Curry leaves, Cooking oil, Mustard seeds, Grated coconut, Hing, Sesame, Sugar, Ginger garlic paste, Turmeric powder, Coriander, Salt

In a large mixing bowl, combine 200 grams of gram flour (besan), 1 teaspoon of ginger-green chili paste, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of turmeric powder. Mix well.

Gradually add 150 ml of water to the mixture, whisking continuously to form a smooth batter. Set aside for 10 minutes.

Grease a steamer plate or a deep plate with oil.

In a separate small bowl, mix 1 teaspoon of Eno fruit salt with 1 tablespoon of water. Pour this mixture into the batter and mix well.

Pour the batter into the greased plate and spread it evenly.

Place the plate in a preheated steamer and steam for 15-20 minutes on medium heat, or until a toothpick inserted in the center comes out clean.

Remove the plate from the steamer and let it cool for a few minutes.

For the tempering, heat 2 tablespoons of oil in a small pan. Add 1 teaspoon of mustard seeds, 1 teaspoon of sesame seeds, a pinch of asafoetida, and 8-10 curry leaves. Let them crackle.

Pour the tempering over the cooled dhokla and spread it evenly.

Garnish with chopped coriander leaves and grated coconut (optional).

Cut the dhokla into square pieces and serve with green chutney or tamarind chutney.
