Dabeli is a popular Indian street food that combines spicy, tangy, and sweet flavors in a deliciously stuffed bun. It's a perfect snack for any time of the day.

Boil 2-3 medium-sized potatoes, peel and mash them. Set aside.

In a pan, heat 2 tablespoons of oil and add 1 teaspoon of cumin seeds. Once they start to crackle, add 1 finely chopped onion and sauté until translucent.

Add 1 tablespoon of dabeli masala, 1 teaspoon of red chili powder, and 1 teaspoon of amchur (dry mango powder) to the pan. Mix well and cook for 2 minutes.

Add the mashed potatoes to the pan and mix well with the spices. Cook for another 2-3 minutes. Remove from heat and let it cool.

In a small bowl, mix 2 tablespoons of tamarind chutney and 2 tablespoons of green chutney. Set aside.

Slice 6-8 pav buns (Indian bread) horizontally without cutting them completely. Spread the chutney mixture on both sides of the bun.

Stuff the buns with the potato mixture, add some chopped onions, and sprinkle with sev (crunchy chickpea noodles) and pomegranate seeds.

Heat a tawa or griddle, add some butter, and toast the stuffed buns on both sides until golden brown and crispy.
