Crispy Chilli Potato is a delicious Indo-Chinese appetizer that combines the flavors of spicy chilli sauce with crispy fried potatoes, making it an irresistible treat for your taste buds. Wash and peel 4 medium-sized potatoes. Cut them into thin, long strips (like French fries) and soak them in cold water for 15 minutes.

In a bowl, mix 4 tablespoons of cornflour, 2 tablespoons of rice flour, 1/2 teaspoon of red chilli powder, 1/4 teaspoon of black pepper powder, and salt to taste. Add the drained potato strips and coat them well with the mixture.

Heat oil in a deep frying pan or kadai over medium heat. Once the oil is hot, deep fry the coated potato strips in batches until they turn golden brown and crispy. Remove them from the oil and place them on a paper towel to absorb excess oil.

In another pan, heat 2 tablespoons of oil over medium heat. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chillies. Sauté for a minute or until fragrant.

Add 1/4 cup of chopped onions and 1/4 cup of chopped capsicum to the pan. Sauté for 2-3 minutes until they turn slightly soft.

Add 2 tablespoons of tomato ketchup, 2 tablespoons of red chilli sauce, 1 tablespoon of soy sauce, and 1 tablespoon of vinegar. Mix well and cook for 2 minutes.

Add the fried potato strips to the pan and toss them well with the sauce mixture. Cook for another 2 minutes, ensuring the potatoes are well coated with the sauce.

Garnish with chopped spring onion greens and serve hot.
