Tamarind Rice (puliyogare)
Tamarind Rice, also known as Puliyogare, is a tangy and spicy South Indian rice dish made with tamarind, spices, and rice. It is a popular dish for lunch and is often served during festivals and special occasions.

Soak 50 grams of tamarind in 250 ml of warm water for 20 minutes. Squeeze the tamarind to extract the pulp and strain it to remove any seeds or fibers. Set the tamarind extract aside.

Cook 250 grams of rice in a pressure cooker or rice cooker until it is soft and fluffy. Spread the cooked rice on a plate and let it cool.

In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds and let them splutter. Then, add 1 teaspoon of chana dal, 1 teaspoon of urad dal, and 2 tablespoons of peanuts. Fry them until they turn golden brown.

Add 1/4 teaspoon of asafoetida (hing), 1/4 teaspoon of turmeric powder, and 10-12 curry leaves to the pan. Stir well.

Pour the tamarind extract into the pan and add 1 teaspoon of jaggery. Cook the mixture on medium heat until it thickens.

Add 1 teaspoon of salt and 1 teaspoon of rasam powder to the tamarind mixture. Cook for another 2-3 minutes.

Gently mix the tamarind mixture with the cooled rice, ensuring that the rice is evenly coated with the tamarind sauce.

Garnish the tamarind rice with chopped coriander leaves and serve.
