Semiya Payasam
Semiya Payasam is a delicious and creamy Indian dessert made with vermicelli, milk, and sugar, garnished with nuts and raisins. It's perfect for festive occasions and family gatherings. Ingredients: Vermicelli, Milk, Kishmish, Sugar, Cardamom powder, Ghee, Cashews

In a heavy-bottomed pan, dry roast 100 grams of vermicelli (semiya) on low heat until it turns golden brown. Keep stirring to avoid burning. Once roasted, set it aside.

In the same pan, heat 1 tablespoon of ghee. Add 10-12 cashews and 10-12 raisins, and fry them until they turn golden brown. Remove them from the pan and set aside.

Pour 1 litre of full-fat milk into the pan and bring it to a boil. Once the milk starts boiling, add the roasted vermicelli and cook on medium heat until the vermicelli becomes soft and the milk thickens slightly.

Add 150 grams of sugar to the pan and mix well. Cook for another 5-7 minutes, stirring occasionally.

Add 1/4 teaspoon of cardamom powder and the fried cashews and raisins to the payasam. Mix well and cook for another 2 minutes.

Turn off the heat and let the semiya payasam cool down a bit before serving. You can serve it warm or chilled, as per your preference.
