Rava Upma
Rava Upma is a delicious and nutritious South Indian breakfast dish made with sooji (semolina). It is flavored with a blend of spices and garnished with fresh coriander leaves.
Ingredients: Sooji, Chana dal, Tomato, Onion, Cashews, Coconut chutney, Salt, Ginger, Mustard seeds, Urad dal, Green chilli, Coriander, Cooking oil

Measure 200 grams of sooji (rava) and dry roast it in a pan on low-medium heat for 5-7 minutes until it turns light golden brown. Keep stirring to avoid burning. Once done, transfer it to a plate and set aside.

In the same pan, heat 2 tablespoons of oil or ghee. Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 teaspoon of urad dal, 1 teaspoon of chana dal, and 1 tablespoon of cashew nuts. Fry them until they turn golden brown.

Add 1 finely chopped onion, 2-3 chopped green chilies, and 1 teaspoon of grated ginger. Sauté until the onions turn translucent.

Add 1 chopped tomato and cook until it turns soft.

Pour 500 ml of water into the pan and add salt to taste. Bring the water to a boil.

Slowly add the roasted sooji to the boiling water while continuously stirring to avoid lumps.

Cover the pan with a lid and cook on low heat for 5-7 minutes until the sooji absorbs the water and becomes fluffy.

Turn off the heat and add 2 tablespoons of chopped coriander leaves. Mix well and let it rest for 2-3 minutes.

Serve the rava upma hot with coconut chutney or pickle.
