Moong Dal Halwa
Moong Dal Halwa is a rich, creamy, and delicious Indian dessert made from split yellow moong dal, ghee, sugar, and flavored with cardamom and saffron. It's perfect for festive occasions and celebrations.

Wash and soak 1 cup (200 grams) of split yellow moong dal in water for 4-5 hours or overnight.

Drain the water and grind the soaked moong dal into a coarse paste using a mixer grinder, without adding any water.

In a heavy-bottomed pan, heat 1 cup (200 grams) of ghee on medium flame.

Add the moong dal paste to the ghee and cook on low-medium flame, stirring continuously to avoid sticking to the pan. Cook until the dal turns golden brown and releases a pleasant aroma (approximately 20-25 minutes).

In another pan, heat 1 cup (200 grams) of sugar and 1 cup (250 ml) of water on medium flame. Stir until the sugar dissolves completely and the syrup comes to a boil.

Add 1/4 teaspoon of cardamom powder and a few strands of saffron to the sugar syrup. Mix well and cook for another 2-3 minutes.

Slowly pour the sugar syrup into the cooked moong dal, stirring continuously to avoid lumps. Cook on low flame until the halwa thickens and the ghee starts to separate from the sides of the pan (approximately 10-15 minutes).

Garnish the moong dal halwa with chopped almonds, pistachios, and cashews. Serve hot or at room temperature.
