Indian Masala Pasta
Indian Masala Pasta is a delicious fusion dish that combines the flavors of Indian spices with Italian pasta. This mouth-watering treat is perfect for a quick and satisfying meal.

Boil 200 grams of pasta (preferably penne or fusilli) in a large pot of water with a pinch of salt until it is cooked al dente. Drain the pasta and set it aside.

In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and 2 finely chopped green chilies. Sauté until the onions turn golden brown.

Add 1 teaspoon of ginger-garlic paste and cook for a minute.

Add 1 chopped tomato and cook until it turns soft and mushy.

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of garam masala, and salt to taste. Cook the spices for 2-3 minutes.

Add 1/2 cup of mixed vegetables (such as peas, carrots, and bell peppers) and cook for 5-7 minutes until they are tender.

Add the cooked pasta to the pan and mix well, ensuring the pasta is coated with the masala.

Cook for another 2-3 minutes, then garnish with chopped coriander leaves and grated cheese (optional).
