Dahi Aloo
Dahi Aloo is a delicious and creamy North Indian dish made with potatoes and yogurt-based gravy. It's a perfect comfort food that can be enjoyed with roti or rice.
Ingredients: Potato, Curd, Coriander, Salt, Turmeric powder, Cumin seeds, Red chilli powder, Ginger, Coriander powder, Green chilli, Cooking oil

Boil 3-4 medium-sized potatoes, peel and cut them into cubes. Set aside.

In a bowl, whisk 250 grams of curd (dahi) until smooth. Set aside.

Heat 2 tablespoons of oil in a pan. Add 1 teaspoon of cumin seeds (jeera) and let them crackle.

Add 1 finely chopped green chili and 1 teaspoon of grated ginger. Sauté for a minute.

Add 1/4 teaspoon of turmeric powder (haldi), 1/2 teaspoon of red chili powder, and 1/2 teaspoon of coriander powder (dhania powder). Mix well.

Lower the heat and slowly add the whisked curd to the pan, stirring continuously to avoid curdling.

Add the boiled and cubed potatoes to the pan. Mix well to coat the potatoes with the curd mixture.

Add salt to taste and 1 cup of water. Simmer the gravy for 5-7 minutes, stirring occasionally.

Garnish with chopped coriander leaves and serve hot with roti or rice.
