Chole Bhature
Chole Bhature is a popular North Indian dish consisting of spicy chickpea curry (chole) and deep-fried, puffed bread (bhature). It's a delightful combination of flavors and textures, perfect for a weekend brunch or a festive meal.
Ingredients: Maida, Kabuli chana, Tomato, Ginger garlic paste, Garam masala, Tea bag, Red chilli powder, Onion, Baking soda, Coriander powder, Sooji, Salt, Cumin seeds, Turmeric powder, Curd, Cooking oil

Soak 250 grams of kabuli chana (chickpeas) in water overnight or for at least 6-8 hours. Drain the water and rinse the chickpeas.

Pressure cook the soaked chickpeas with 1.5 liters of water, 1 tea bag, and 1/2 tsp of salt for 4-5 whistles or until they are soft. Discard the tea bag and set aside.

In a pan, heat 2 tbsp of oil and add 1 tsp of cumin seeds. Once they crackle, add 1 finely chopped onion and sauté until golden brown.

Add 1 tbsp of ginger-garlic paste and sauté for 2 minutes. Then, add 2 chopped tomatoes and cook until they are soft and mushy.

Add 1 tsp of turmeric powder, 1 tsp of red chili powder, 1 tsp of coriander powder, 1 tsp of garam masala, and 1 tsp of amchur (dry mango powder). Cook for 2-3 minutes.

Add the cooked chickpeas along with the water they were cooked in. Simmer for 10-15 minutes until the gravy thickens. Adjust salt as needed.

For the bhature, mix 2 cups of maida (all-purpose flour), 1/2 cup of sooji (semolina), 1/2 cup of dahi (yogurt), 1/2 tsp of baking soda, and 1/2 tsp of salt in a bowl. Knead into a soft dough using water as needed. Cover and let it rest for 1-2 hours.

Divide the dough into equal-sized balls and roll them out into oval or round shapes.

Heat oil in a deep frying pan and deep-fry the rolled-out dough one at a time until they puff up and turn golden brown. Drain on paper towels.
