Chicken 65 is a spicy, deep-fried chicken dish originating from South India. It is a perfect appetizer or snack, packed with flavors and a crispy texture.
Ingredients: Chicken, Red chilli powder, Ginger garlic paste, Ginger, Corn starch, Black pepper powder, Mustard seeds, Green chilli, Garlic, Curry leaves, Rice flour, Coriander, Garam masala, Turmeric powder, Cooking oil

Cut 500 grams of boneless chicken into bite-sized pieces and marinate with 1 teaspoon of ginger-garlic paste, 1 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of garam masala, 1 tablespoon of lemon juice, and salt to taste. Let it marinate for at least 30 minutes.

In a separate bowl, mix 2 tablespoons of cornflour, 2 tablespoons of rice flour, and 1/2 teaspoon of black pepper powder. Add this mixture to the marinated chicken and mix well, ensuring the chicken pieces are well coated.

Heat oil in a deep frying pan or kadai. Once the oil is hot, deep fry the chicken pieces in batches until they turn golden brown and crispy. Remove the fried chicken pieces and place them on a paper towel to absorb excess oil.

In another pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds and let them splutter. Then add 1 teaspoon of chopped garlic, 1 teaspoon of chopped ginger, 2-3 chopped green chilies, and 10-12 curry leaves. Sauté for a minute.

Add the fried chicken pieces to the pan and toss well, ensuring the chicken is coated with the tempered spices. Cook for 2-3 minutes on medium heat.

Garnish with chopped coriander leaves and serve hot with lemon wedges.
