Beetroot Kofta
Beetroot Kofta is a delicious and healthy Indian dish made with grated beetroot, spices, and gram flour. These koftas are deep-fried and served with a rich and creamy tomato-based gravy.
Ingredients: Beetroot, Onion, Tomato, Turmeric powder, Red chilli powder, Salt, Garam masala, Cumin powder, Ginger garlic paste, Besan, Cumin seeds, Dairy cream, Coriander powder, Coriander, Cooking oil

Peel and grate 250 grams of beetroot. Squeeze out the excess water and keep the grated beetroot aside.

In a mixing bowl, add the grated beetroot, 100 grams of gram flour (besan), 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of cumin powder, and salt to taste. Mix well to form a dough-like consistency.

Heat oil in a deep frying pan for deep frying the koftas.

Make small round balls from the beetroot mixture and gently slide them into the hot oil. Fry the koftas on medium heat until they turn golden brown. Remove from oil and place them on a paper towel to absorb excess oil.

For the gravy, heat 2 tablespoons of oil in a pan. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until golden brown. Add 1 teaspoon of ginger-garlic paste and cook for 2 minutes.

Add 2 finely chopped tomatoes and cook until they turn soft and mushy.

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and salt to taste. Cook for 2-3 minutes.

Add 1 cup of water and bring the gravy to a boil. Lower the heat and let it simmer for 5-7 minutes.

Add 1/2 cup of fresh cream and mix well. Gently place the beetroot koftas in the gravy and cook for another 2-3 minutes.

Garnish with chopped coriander leaves and serve hot with roti, naan, or rice.
